Just shining my tiara!


I have been joking with my mom lately about how I am loving all things domestic and that I should have a tiara because I am the queen of domesticity! (Note: I am soooo NOT the domestic one by nature... so it takes a lot of extra effort on my part to try to be domestic.)

This year I am really trying to focus on healthy, home cooked meals for my family. This is new to us. Bill loves me, but really does not care for my cooking. We were raised very differently... and that goes down to every single detail of our lives, including our meals! So he uses LOTS of Mexican spices, and does not care if something is "charcoaled" (burnt). He feels it gives it extra flavor.

Anyway, between Bill not really loving my cooking, and my sons both having Major Eating Issues... I always figured, what was the point of making nice meals? But now Brighton is in school, and I feel like having an actual dinner time with the family is really important. Talking, sitting at the table, learning manners and communication.... all of that. I like it when Bill eats what I fix, but I understand if he chooses to make himself a "snack" an hour or two later. I certainly would not want to have to rely on only his cooking for the rest of my life. (Love you hunnie!)

So... that all being said, I have had a lot of fun planning menus, finding ways to get my boys to eat more, and really getting into the family dinner setting.

This week I made Chicken Enchiladas. They were DELICIOUS! I had to make 3 different pans though.

One for Bill, Lots of Cilantro, Jalipeanos, Onions and pepper.

One for me, High Protein... Lots of Black Beans, chicken and cheese.

One for Brighton. I am just happy that he even tries anything! His was plain tortillas, one side had chicken in them. The other side had cheese in them. He liked them both, and so next time he said he would try one with both cheicken and cheese in it! Yahoo!

My biggest secret for GREAT enchiladas... trader Joe's Enchilada sauce is the best! The sauce you buy at regular grocery stores in nasty! But the Trader Joe's sauce is much more like the "Mexican Food Restaurant" taste. Soo yummy.

Also... my new fav food. Black beans. I am hooked! They are delicious and healthy!

Brighton loves to help me bake treats. He measures the ingredients, turns on and off the mixer, and licks the beater when we are finished. It is so fun to do this with him, just like I remember doing it with my mom when I was 5!

We made cookies Sunday morning for a friend who needed help with cookies. I wanted to be creative and have fun with them. We made basic sugar cookies, then frosted them with DELICIOUS cream cheese, nutmeg spice frosting, and then did chocolate ganosh frosting swirls for deco.
